Atuação do nutricionista líder em unidade de alimentação e nutrição no segmento de refeições transportadas para penitenciárias em Curitiba – PR e Região Metropolitana

O artigo aborda um breve histórico sobre o sistema penitenciário do estado do Paraná, como é a alimentação dos presos e as normas para refeição transportada, descreve as atribuições do profissional nutricionista em unidades de alimentação e nutrição, expõe sobre o nutricionista líder e a importância do feedback. Buscou-se compreender como é a liderança do nutricionista na visão dos colaboradores e a relação interpessoal com sua equipe de trabalho, por meio de aplicação de questionário em duas empresas de refeições coletivas que atendem penitenciárias e delegacias de Curitiba-PR e região metropolitana. Trata-se de uma pesquisa descritiva, quantitativa e de pequena amostragem, 100% definida, com aplicação de questionário de avaliação do líder imediato (nutricionista). Conclui-se que um líder eficaz deve ser motivado, ter espírito de treinador, deve saber aplicar feedback, tanto positivo quanto o construtivo, ter comprometimento carisma e caráter, deve saber se expressar com seus liderados, deve saber lidar com conflitos interpessoais e solucionar problemas de imediato, deve ter discernimento, atitude positiva, transmitir segurança, ter visão, ser prestativo, tem que procurar adquirir a confiança da equipe aos poucos, saber ouvir, ser paciente e deixar os liderados expressarem sua opinião.

Abstract

The article discusses a brief history of the prison system of the state of Paraná, as is the supply of prisoners and the standards for meal transported, describing the duties of the nutritionist in units of food and nutrition, exposes on leading nutritionist and the importance of feedback. We sought to understand how the leadership of the nutritionist in the view of employees and interpersonal relationship with their team, through a questionnaire in two catering corporations that meet prisons and police stations in Curitiba-PR and metropolitan area. This is a descriptive, quantitative research and small sample, 100% defined, using a questionnaire to assess the immediate leader (nutritionist). Concludes that an effective leader must be motivated, have spirit coach, must know how to apply feedback, both positive and the constructive engagement have charisma and character, must learn to express themselves with their followers, should know how to deal with interpersonal conflicts and solve problems immediately, it should be discerning, positive attitude, providing security, having vision, being helpful, it has to seek to acquire the confidence of the team slowly, listening, be patient and let the followers express their opinion.
